Today is the first day of school for 2020! Gosh! how time flies! This year marked the 20th wedding anniversary too! I feel so old!

The day start with 3 alarms being set to avoid being late. The start of the day went well and Baby B is starting a new chapter in a new environment. He is at his best today for being the first to wake up and ready for school! Proud of you, B!

As the evening approach to call it a day, I have a sudden urge to bake! Then, I recalled the Christmas present I received – Wilton Cookie Press! from my sister-in-law. Quickly make some research on the recipe and modified to the ingredients I have at home and I started to bake.

The outcome is G.R.E.A.T! Crunchy cookies taste wonderful!

Recipe attached as below :

Ingredients
  • 170g butter, room temperature
  • 60g brown sugar
  • 1 egg
  • 207g self raising flour
  • 1/2 tsp vanilla extract
  • 100g nestum original 3-in-1 packet
Method
  • Mix butter and sugar well. Beat until it’s fluffy and light.
  • Add egg and vanilla extract and mix well.
  • Sieve the flour and add in batch by batch.
  • Add nestum and mix well.
  • Shape the cookies as you wish – in my case, I use the Wilton Cookie Press for assorted shapes!
  • Preheat 180C and bake for 15 minutes.
