Chinese New Year is just around the corner and preparation this year is so much different from those prior! I have never baked cookies for CNY before due to different commitment in life. Well, it is definitely not too late to start! 💪

Homemade Assorted cookies

As this recipe is not able to go into the Wilton Cookies mould, I used the biscuit cutter with star-shaped to differentiate the different cookies flavour.

Ingredients

  • 2 tbsp almond flakes (add more as you prefer)

  • 80g butter
  • 60g sugar

  • 1 egg yolk
  • 1/2 tsp vanilla essence
D
  • 140g soft flour
  • 1/4 tsp baking powder

Methods

  1. Chopped almond flakes into tiny pieces
  2. Preheat oven at 180C
  3. Cream the butter and sugar till light colour – Beat the butter and sugar at level 1 and then increase to level 5.
  4. Add in egg yolk and vanilla essence and mix well at level 3 speed.
  5. Sift flour and baking powder (D) into the batter and mix well with spatula.
  6. Add in chopped almond flake and mix well.
  7. Use hand to shape into a big ball.
  8. Sprinkle some flour on the working surface and worked into a thin layer and use the cookie cutter to shape the dough.
  9. Bake for 15-20 minutes till golden brown.
