Chinese New Year is just around the corner and preparation this year is so much different from those prior! I have never baked cookies for CNY before due to different commitment in life. Well, it is definitely not too late to start! 💪
As this recipe is not able to go into the Wilton Cookies mould, I used the biscuit cutter with star-shaped to differentiate the different cookies flavour.
Ingredients
A
- 2 tbsp almond flakes (add more as you prefer)
B
- 80g butter
- 60g sugar
C
- 1 egg yolk
- 1/2 tsp vanilla essence
D
- 140g soft flour
- 1/4 tsp baking powder
Methods
- Chopped almond flakes into tiny pieces
- Preheat oven at 180C
- Cream the butter and sugar till light colour – Beat the butter and sugar at level 1 and then increase to level 5.
- Add in egg yolk and vanilla essence and mix well at level 3 speed.
- Sift flour and baking powder (D) into the batter and mix well with spatula.
- Add in chopped almond flake and mix well.
- Use hand to shape into a big ball.
- Sprinkle some flour on the working surface and worked into a thin layer and use the cookie cutter to shape the dough.
- Bake for 15-20 minutes till golden brown.
