MCO Day #28

Movement Control Order (MCO) was supposed to end today….but it was again extended for another 2 weeks to enable the “flatten of the curve” – to maintain the number of infected by the coronavirus or Covid-19!

I had mixed feelings – Glad that the kids would be at home, safe from the unknown environment out there – be it in school or out and about! Sad that the restriction had prohibited movement outside of our house boundaries – I missed going out with hubby for short drive, be it for quick groceries, breakfast or our favourite past time activity – pokemon hunting 😋…

Nonetheless, I learned so much spending the time with loved ones that this is a lifetime lesson for all of us. It change the way we live, act/behave, and most of all – improved communication amongst family member.

So, it’s time to try something new! Chocolaty recipe! Hubby’s favourite!

Let’s go BROWNIES!!!!

Ingredients

Brownies Ingredients

A

  • 260g dark chocolate chips
  • 225g unsalted butter

B

  • 3 eggs (room temperature)
  • 1tbsp coffee (omitted as per preference)
  • 1tbsp vanilla essence
  • 200g granulated sugar – to adjust based on preference
  • 200g light brown sugar

C

  • 120g flour
  • 75g cocoa powder (prefer Van Houten)
  • 1tsp salt

Method

  1. Line up the baking pan with parchment paper.
  2. Melt A starting with chocolate chip followed by butter – set aside to cool.
  3. Whisk B with egg beater.
  4. Add in melted A into the batter and mix well.
  5. Sift B into the batter.
  6. Fold the batter with spatula evenly.
  7. Pour into the baking pan.
  8. Bake at 180C for 35 minutes.
  9. Serve with ice cream – heavenly yummy!
