Colourful kuih lapis

Kuih Lapis is a common “nyonya kuih” available at any Nyonya Stalls. Our favourite place that serves the nice Nyonya Kuih is “Nyonya Colours”. The food stall chain is located at most of the shopping centre around Malaysia. This is also one of Baby C’s favourite kuih as she loves to peel and eat them layer by layer….

As I have all the ingredients available in my pantry today, I guess I would like to give it a shot! And so, my first attempt on making Kuih lapis.

 

 Ingredients

  • 500ml water
  • 400ml coconut cream
  • 160g sugar
  • 190g rice flour
  • 60g plain flour
  • 60g cornstarch
  • 1 tsp salt
  • Food colouring as per preference – I used rose pink, violet, blue, and orange.

 

 Methods

  1. Mix water with coconut cream
  2. Add sugar until it dissolve
  3. Sieve all dry ingredients (rice flour, plain flour, cornstarch and salt)
  4. Add the wet ingredients slowly into the dry ingredients.
  5. Divide into the 5 portion and add 4 colours to the different batter leaving one with natural colour white.
  6. Oil the pan with cooking oil.
  7. Pour one of the coloured batter into the pan and steam.
  8. Steam each layer for 7 mins whereas the last layer, steam longer for 20 minutes.
  9. Once done, remove from the steamer and let it cool.
  10. Once it cooled down, cut according to your preference. [Tip: Oil the knife every time you cut to ensure the edge remain nice and clean.]

Verdict : Nice texture and Baby C like them. However, it can’t beat the one sold at Nyonya Colours – hahaha!
