Today is 8th May 2020, so happen to be Malaysia’s MCO Day#52 and also Ramadhan Day#15 — I’m finally challenging myself in making “Kuih Ketayap or Kuih Dadar Gulung”. In fact, I had been silently challenging myself to try this recipe but there’s always an excuse not to do it because one of the important ingredient is not readily available in my pantry – fresh grated coconut!
This morning, hubby said “Since now they allow 2 persons of the same family on any trips to the groceries or etc, let’s go for a drive.” We did just that around the neighbourhood just to get some air…As we pass-by the nearby market, I saw the grocers open – the only one that I know selling fresh grated coconut! As we drove past, I suddenly yelled, “Stop! I would like to get some coconut.” Hubby looked so puzzled and stopped by the roadside. I told him I had wanted to get some fresh grated coconut and he offered to get them. Thank you, dear!
When I saw the bag of fresh grated coconut, I had mixed feelings….happy that I can now explore another new recipe and worried that I may flop. Should I just use the grated coconut and get some santan for perhaps making ‘agar-agar”, i.e. coconut jelly?
What the hack!!!! Just try it with small portion and if flop, hubby would be the guinea pig to finish them off….he hardly waste and will gobble anything that I whipped out – hahaha! Relief! So, as soon as we reached home, we had simple bread and tea for breakfast and off I went to prepare for the challenging task….
Took out the note and I start to weight the ingredients – reduced all by halves to ensure I don’t overdo….As I got the batter up – nice green batter, ready to pan fry….I’m all excited! Then, I moved on to do the fillings. As I got the nice fragrant fillings – I’m over the moon!!!!
Remove the well-fragrant fillings into a bowl, cleaned the wok and ready for the crepe making – Kuih dadar…..
I had been practicing making crepe for breakfast and handling this batter – slightly thicker as compared to the french crepe, I hit it off quite successfully on the first try. The rest became more fun and in fact I was sad when the batter is nearly done – wished I had made more! LOL!
Putting the first 2 pieces together with uneven sizes, I smiled to myself and said…not badlah….nobody will notice the shape if it taste good…. So, I grabbed the first shorty piece and rushed to hubby who was on con-call at that time. I signalled to him whether he can try them now and he showed sign language “ok”. And I popped it into his mouth and waited for the response. He then, gave me a “thumbs up” and whisper “pass” while he smiled! Happily then, I went back to the kitchen to try the other piece….hmmmm…not bad at all!
And so, I finished up wrapping all and also got Baby A to try… Baby A had been struggling to finish her Art pieces and had been burning midnight oil for nearly 2 weeks! I kept my fingers crossed that she will like it too! Baby A gave me a “thumbs-up” too! So, I would consider my mission accomplished! Send text to my family WhatsApp group and so happen, it’s my younger brother’s favourite too… Perhaps, during the next family gathering, I can prepare this for them!
