Do you know why?
Ice cream recipe is egg yolks only recipe whereas Almond Tuiles recipe is egg whites only recipe.
These two recipes are great to be done at the same time. While the ingredients are simple and easy to fetch over the supermarket’s counter, they are great to be served side by side. The crunchiness and the fragrant almond slices of the tuiles compliments the smooth texture of the ice cream.
I would highly recommend these two recipes as sweet treats or desserts for the family!
Homemade chocolate ice cream recipe
Ingredients
Group A
- 3 egg yolks
- 90g castor sugar
- 200ml full cream milk
- 40g dark chocolate chip (61% cocoa), [Can use Beryl dark compound chips]
Group B
- 140g non-dairy whipping cream (sweet base)
- 220g dairy whipping cream
Methods
Super easy steps :
- Mix Group A ingredients in a steel bowl and water bath till all melted. Constantly stir with egg beater and over a low heat.
- Let the mixture cool down to room temperature.
- In another mixing bowl, mix the cold Group B ingredients and whisk till stiff peak. [Note: The group B ingredients need to be cold and straight out from fridge. I place a bag of ice underneath the mixing bowl to keep the temperature as low as possible while whisking.]
- Fold in Group A mixture batch by batch until mix well.
- Transfer into air-tight container and freeze overnight.
- They are awesome.
