Today is Day 5 of Chinese New Year 2021 and we are still in MCO2.0, ie lockdown in Malaysia. No visitation is allowed and daily routine remain unchanged – preparing meals for families, eat, play, watch TV, sleep….and repeat.    Although it’s a great time to connect with yourself, I miss my parents at home!  They can’t travel to KL, where we normally gather each year for Chinese New Year.  While thinking of them dearly, something just pop up : Why not make the Chinese Herbal Tea Eggs that Ama always made for us….For a second, I was excited but it kinda diminish as the preparation time is 3 hours….Then, another idea pop-up – why not try to do it in pressure cooker. And so, I DID!  It was marvelous!

Chinese herbal tea egg RECIPE

INGREDIENTS

METHOD

  1. Boil the eggs in pressure cooker under Bake Mode for 5-10mins and remove from the cooker.  
  2. Pour tap water to cool the egg.
  3. Remove the hot water from the cooker and pour in fresh filter water.
  4. Add in the herbal mix, light soy sauce, dark soy sauce, sugar and salt
  5. Cracked the eggs gently and try not to break them.  Otherwise, you will have eggs detached from the shell and you can’t see the vein patterns on the egg.
  6. Add the cracked eggs into the herbal mix.
  7. Set the pressure cooker to steam mode for 30mins and remember to set the valve to “seal” mode.
  8. Let it sit for 15mins and twitch the valve manually to release the pressure.
  9. Once the pin dropped fully, you will be able to open the lid.
  10. If you prefer stronger taste of herbal mix, you may set it to bake mode to thicken the liquid.  Otherwise, it is ready to be served!

TaaDaa! First homemade chinese herbal tea eggs in pressure cooker!

Although the vein was not obvious but it looks and taste wonderful to me. Mission Accomplished!

The whole process took around an hour as compared to the simmering over the stove pot for 3-4 hours.  I would say, give it a go!

My Baby A was the happiest as she had been missing grandma’s herbal egg since last year.

Baby B on the other hand gave thumbs up to my herbal egg as he prefer the “just nice” taste – not too strong herbal fragrant but with the tinch of herbal taste.

Baby C gave it go and didn’t really like it. 

With this accomplished, I’m going to create more dishes with my favorite kitchen gadget! I’m thinking of braised rice cake – the rice cake that requires overnight soaking to soften it prior to cooking.  Let’s see how that goes!
