Simple Fried Rice Cake recipe is a recipe that I have been wanting to perfect for my family. I stumble across this fried rice cake recipe and it intrigued me to try. I called in simple, simply because I’m a learner in terms of Chinese Cooking and this is simple and suitable for beginner as well, just like me.
What intrigue me the most is the usage of overnight rice. I remember I used to complain that my mom cooked extra rice and refrigerate them for the next day. I couldn’t comprehend that and every time I see a container of rice in the fridge, which my mom will heat up and have lunch with a simple dish, I will keep reminding her of not having that and encourage her to make freshly cook rice for health reasons. However, during the recent COVID-19 pandemic lockdown, I started to explore dishes to prepare for my family, as eating out became impossible. With the limited menu that I master, I get very agitated when my kids start to bombard me with the question the night before : “What are we having for breakfast tomorrow?” Or after breakfast, “What are we having for lunch?” I find myself scrolling FB group more each day looking for ideas. I often blank out and turn to the mighty saviour – cooked rice in the fridge! My best dish – “fried rice” with whatever I can find in my fridge! And so, I started to cook more rice the day before and have fried rice the next day. Hahahaha!
OMG……I’m doing what my mom was doing and it hit me hard for doing what I asked my mom not to do! Well, I kinda understand now that at times, the cook gets tired and not knowing what to prepare, extra cooked rice in the fridge can come in handy! “Ma, I’m sorry that I was so harsh on you before, please forgive me! Huhuhuhu!”
Emotion aside…..So, I admit – I do normally have a tub of cooked rice in my fridge and it comes really handy whenever my kids are hungry and I will whipped up a quick rice soup or fried rice or kimchi fried rice or even rice porridge with whatever ingredients I have in my fridge.
Now that you know I always have overnight rice in my fridge…..it is why that I loved this recipe….because it will be using the overnight rice that I ever ready have in my fridge! Don’t you just love this recipe – Oh! I do! I simply adores it!

Ingredients for steamed rice cake
- 50g all purpose flour
- 60g corn flour
- 1/4 tsp salt
- 130-140g cooked rice (for my case, I used overnight rice from the fridge)
- 300ml water
Steamed and diced rice cake ready for stir fry.
Methods
- Blend cooked rice and 300ml water in blender until smooth texture.
- Add in all purpurse flour, corn flour and salt.
- Continue to blend until all well mixed.
- Pour the batter into a greased and lined steaming pan.
- If you are steaming over the stove, steam on high for around 30mins.
- As I steamed in Philips Pressure Cooker, I keep pressure under steaming mode for 7mins and release the pressure manually.
- Cool the steam rice cake and then cut to cube – according to your likings.
Ingredients for fried rice cake
- Steamed rice cake – cut in cube
- Shallot Oil
- 1 tsp dark soya sauce
- 1 tsp soya sauce
- 1 clove garlic chopped
- 1 egg
- 1 tbsp chopped pickled radish
- 1 tbsp chilli paste – grinded chilli padi, red chilli, dried prawns, shallots, garlic and ginger with Tefal Mini Chopper.
Methods for frying rice cake
- Heat up Philips Pressure Cooker using “BAKE” mode.
- Add in Shallot Oil and the cube size rice cake.
- Add dark soya sauce and stir until the each cube is evenly coated with sauce.
- Remove and set aside.
- Add in Shallot Oil and chilli paste. Stir fry till fragrant. Add in chopped garlic and stir for a little while.
- Add in chopped pickled radish.
- Followed by the dark sauce coated rice cake.
- Stir until all well mixed and pour in the beaten egg.
- Fry till all well mixed and add soya sauce and salt to taste.
- Dish up and serve!
