“What do you want for Christmas?” My brother exclaimed “A homemade cake!” I ignored it till the Christmas morning – just a few hours before the family get-together lunch, I had an urge to finally fulfill his wish. While everyone was still sound asleep in bed, recovering from the midnight mass, I got up and bake a cake.

Scratching my head undecided which recipe to follow, looking for a simple, won’t-go-wrong recipe… Well, it would be the butter cake that I have made few attempts and they turned out good. Then, I saw the banana on the kitchen counter and 💡, why not a banana cake with the butter cake recipe. Since, it’s a family get together, i decided to give it a shot – modified between the carrot cake and butter marble cake recipe….Guess what…it turns out G.R.E.A.T!

Ingredients

  • 225g softened butter – I use Golden Churn Butter in a cane
  • 195g caster sugar
B
  • 4 eggs
C
  • 225g plain flour
  • 1 1/2 tsp baking powder
  • 3/8 tsp baking soda
D
  • 200g mashed banana
  • 3 tbsp fresh milk
E
  • 40g chopped walnut

Methods

  1. Preheat oven to 180C.
  2. Using creaming method – beat “A” till light and fluffy. Start with level 1 and then increase to level 5 speed.
  3. Add in egg – one at a time at level 3 speed.
  4. Sieve “C” into the batter and mix well.
  5. Add in “D” followed by 3/4 of “E”.
  6. Pour batter into mould and sprinkle walnut on top.
  7. Bake for 45 minutes.
