Rushing…rushing…rushing….last minute request for lunch box today from Baby B and C. With an hour to spare before their transport van will come to whisk them to school. Quickly got into my cooking mode and with whatever ingredient I had in the fridge and manage to prepare their all-time favourite – fried noddle with egg and sausage. Dump in some shredded carrot for extra vitamin A. Manage to also squeeze in some time to bake some chocolate chip cookies. Luckily the dough was prepared yesterday and popping some into the baking tray was as easy as ABC. Baby C extended her help by placing them neatly on the tray ready for the oven!
While waiting for the cookies to bake, urged Baby C to revise her “spelling test” scheduled today and then off she went for a quick shower before getting dress for school. Tying her hair into a neat bun is the usual hectic routine which is always done 10-15 minutes before the transport van show up. Glancing the clock every few minutes to ensure that all is done before 11:30am. Tik tok tik tok…..the clocks ticking away! Before they could sit down to relax, “hon, hon….” van is here to pick them up. J.I.T – just in time!
With goodbye kisses, they were off to school and mommy felt relieved! Mission accomplished for the day! Before I could relax, hubby need a ride to the MRT station to catch a train to town for a meeting.
The moment I get back, all my sensory shut down and looking forward for a relax few hours before another ride to pick up Baby A from school. Quickly get some water boiled for a cuppa of goodness 3-in-1 white coffee. Can’t wait to enjoy the cookies I baked earlier with that coffee while relaxing to watch my all-time favourite series “GILMORE GIRLS”. Feeling Blissssssss!

Chocolate chip Recipe – Chewy type!
Ingredients :
A
- 225g butter – melted and cool to room temperature
- 200g brown sugar
- 100g white sugar
B
- 2 eggs
C
- 128g bread flour
- 98g all purpose flour
- 1 tsp baking soda
- 1tsp salt
D
- 2 tbsp vanilla essense
E
- 88g semisweet chocolate chips
- 144g dark chocolate chips
Preparation Methods
- Brown the butter and cool to room temperature.
- Beat “A” until light colour
- Add in “B” one at a time till the texture become light and creamy smooth
- Sift “C” into the batter.
- Fold in “C” till mix well.
- Add in “D” and mix well.
- Mix “E” till even and ready to scoop into baking sheets for storage or straight to oven for baking.
- Bake in preheated oven at 180c for about 12 minutes.
